Today's sumptuous meal will be a roast leg of lamb stuffed with a mint pesto, baked potato & onion, roast asparagus, and a vanilla pudding pie topped with raspberries and mint. The berries are from our garden as is the mint... sort of.
I planted mint five or six years ago along with some other herbs inside a little wooden frame. Little did I know that mint is an escape artist AND spreads like mad. Pretty soon the whole section of our herb garden was being overrun by mint. I'd thin it out. It would laugh and spread more. Eventually I spent an afternoon toiling over the plot, completely eradicating every plant along with every root I could find.
It came back. Slowly, with less bravado, but back all of the same. Now, every few months I make a delicious meal using every single mint plant that can be found. It regroups, time passes, we do it all over again. A tasty impasse.
Damn, that looks good. We're having leftovers tonight again...
It was a FABULOUS meal. And i had a glass of champagne. Ahhhhhh.
